Easy Oven-Baked Chicken Thighs (Boneless & Juicy)
This is my go-to method for fresh and juicy oven-baked chicken. The inspiration for this recipe comes from The Runner’s Kitchen Cookbook, by the amazing and talented Olympic runner, Emma Coburn. This recipe is not only delicious, it’s perfect for meal prep and occasion. You’ll want to give this one a try!
Ingredients
6 boneless skinless chicken thighs
2 Tbs olive oil
1-2 tsp Himalayan salt
1 tsp pepper
1 Tbs dried basil or Italian seasoning
Optional: Flavored salts amplify the flavor beautifully! Add any other seasoning combinations you enjoy!
Easy Oven-Baked Chicken Thighs (Boneless & Juicy)
Steps
Pre-heat oven to 375 °F (190 °C)
Trim any excess fat off of the chicken as you like.
Place chicken thighs on a baking dish or sheet lined with foil.
Drizzle olive oil onto the chicken thighs & season one side. Flip all of the chicken thighs & do the same to the other size.
Bake for 20 minutes, or until an internal temperature of 165 ° is reached.
Allow to rest for a few minutes, slice up, and enjoy!
Notes:
If your chicken thighs are thicker, consider baking for an additional 5 minutes!
These are great for meal prep & having on hand to add extra protein to any meals
Curious on what to do with the excess fat you trimmed off? You can cook it up for your pets & add it to their meal, no extra seasonings!
