These protein cookies/cookie dough bites are perfect for a pre or post workout snack or after dinner sweet. There’s no eggs in this protein cookie “dough” so you can make it into protein bites OR bake them up! It’s totally up to you! Imagine a baked protein cookie with your morning cup of ?


PEANUT BUTTER DARK CHOCOLATE CHIP PROTEIN OATMEAL COOKIES & PROTEIN BITES

Ingredients

- 3/4 cup creamy peanut butter (my go-to is Member’s Mark from @samsclub)

- 1/2 cup maple syrup

- 1 1/2 scoops vanilla protein powder

- 1 Tbs PB2 powder

- 1 tsp vanilla

- 1/2 tsp cinnamon

- 1 to 1 1/2 cup instant oats

- 1 cup dark chocolate chips (plus some extra)

- Dash of salt

Steps

FOR PROTEIN COOKIES

1) Pre-heat an oven to 350 degrees Fahrenheit. Prepare a baking sheet with parchment paper or greased aluminum foil.

2) In a microwave safe bowl, soften the peanut butter in the microwave for 20-30 seconds.

3) Add maple syrup to softened peanut butter & mix together with a spatula.

4) Add remaining ingredients until a dough is formed.

5) Using a cookie scoop, line your baking sheet with scoops of cookie dough & flatten with the back of a spoon. Add extra dark chocolate chips.

6) Bake for 7-8 minutes & remove for the oven & cool for 10 minutes. Enjoy!

FOR PROTEIN BITES

1) Follow steps 2-4 above

2) Taking a spoon, form dough into balls.

3) Freeze or refrigerate your protein bites in an air tight container. Enjoy!
