Dark Chocolate Blueberry Baked Oatmeal
Ingredients
1 mashed banana
2 eggs
1 1/2 c milk (I use oat or almond milk)
1 1/2 c instant oats
1/4 c cocoa powder
3/4 c sweetener (you can use coconut sugar, maple syrup, or honey)
1 Tbs flax seed (optional)
2 Tbs chia seed (optional)
1 to 1 1/2 c blueberries (fresh or frozen)
3-4 to 1 c choc chips (I used semi-sweet mini chips)
Steps
Pre-heat oven to 350 degrees Fahrenheit.
Grease a 9 by 3 inch pan & set aside.
Add the first 3 ingredients (wet ingredients) to a bowl. (If your sweetener is liquid, I’d add it here)
Add dry ingredients to the mixture & incorporate.
Pour mixture into the greased pan. Top with blueberries & chocolate chips
Bake for 25 to 30 min (until an inserted toothpick comes clean or when solid & the blueberries are bursting and juicy!)
Optional Topping Ideas - yogurt, maple syrup, nuts, nut butter, seeds, coffee creamer, additional chocolate chips
