Dark Chocolate Blueberry Baked Oatmeal

Ingredients

  • 1 mashed banana

  • 2 eggs

  • 1 1/2 c milk (I use oat or almond milk)

  • 1 1/2 c instant oats

  • 1/4 c cocoa powder

  • 3/4 c sweetener (you can use coconut sugar, maple syrup, or honey)

  • 1 Tbs flax seed (optional)

  • 2 Tbs chia seed (optional)

  • 1 to 1 1/2 c blueberries (fresh or frozen)

  • 3-4 to 1 c choc chips (I used semi-sweet mini chips)

  • Steps

  1. Pre-heat oven to 350 degrees Fahrenheit.

  2. Grease a 9 by 3 inch pan & set aside.

  3. Add the first 3 ingredients (wet ingredients) to a bowl. (If your sweetener is liquid, I’d add it here)

  4. Add dry ingredients to the mixture & incorporate.

  5. Pour mixture into the greased pan. Top with blueberries & chocolate chips

  6. Bake for 25 to 30 min (until an inserted toothpick comes clean or when solid & the blueberries are bursting and juicy!)


Optional Topping Ideas - yogurt, maple syrup, nuts, nut butter, seeds, coffee creamer, additional chocolate chips
