Crustless Quiche
Ingredients :
6 eggs
1.5 cups of milk (I used almond milk)
2-3 cups of chopped spinach
1 cup of chopped turkey, ham, or bacon (or meat of your choice. You can also omit this too to make it vegetarian!)
1.5 cups of shredded cheese
1-2 cups of grape tomatoes (halved)
1 Tbs minced garlic
0.5 tsp salt
0.5 tsp pepper
0.5 tsp chili powder
Other optional add-ins to taste (onion powder, parsley, basil, Italian seasoning, white pepper, Parmesan cheese)
Steps
Pre-heat oven to 350 degrees F
Grease a pie pan with butter, oil, or non-stick spray.
Crack eggs into a bowl. Add milk & whisk eggs and milk together.
Add chopped spinach, (other veggies of your choice), chopped meat/protein, and shredded cheese, minced garlic, & spices to the egg mixture & ensure all ingredients are incorporated.
Pour mixture into greased pan / pie plate.
(Optional) - with the tomatoes, I arrange them on top after I pour the mixture into the pan & they carmelize a bit on top through the baking process!
Bake for 50-60 minutes / until an inserted toothpick comes out clean from the center of the quiche.
