Blueberry Banana Protein Baked Oatmeal
Ingredients:
1-2 bananas
1 1/2 cups almond milk
1/3 – 1/2 cup maple syrup
1 1/2 cup instant oats
1-2 scoops vanilla protein powder
1 Tbs chia or flax seeds
1 Tbs cinnamon
1 1/2 to 2 cups of blueberries
3/4 cup chopped walnuts
Steps:
Preheat oven to 350°F (175°C) and grease a 9x13-inch baking pan.
In a large bowl, mash the bananas. Stir in almond milk and maple syrup until well combined.
Add the oats and protein powder; stir to combine.
Mix in the chia or flax seeds and cinnamon.
Fold in blueberries and walnuts, reserving a handful for topping.
Pour the mixture into the greased pan and spread evenly.
Sprinkle remaining blueberries and walnuts on top.
Bake for 35–40 minutes, or until the edges are golden and the center is set.
Let cool slightly before slicing. Enjoy warm or chilled!
